Making brownies is something the whole family can get involved in. Plus they have the enjoyment of getting to eat all their work. It’s a great way to pass a weekend day or some extra time after school. The kids will love it!

Marble Brownies

1 cup shortening, softened

2 cups sugar

4 eggs

1 1/2 cups sifted flour

1 teaspoon baking powder

1 teaspoon of salt or less

1 teaspoon vanilla

2 ounces unsweetened chocolate, melted

Frosting

1 ounce unsweetened chocolate

2 tablespoons margarine

4 tablespoons milk

2 cups sifted, powdered sugar

1/2 cup chopped nuts

Cream together shortening, sugar and eggs and blend thoroughly. Sift together flour, baking powder and salt and stir into creamed mixture. To half of batter, add vanilla and mix well. To other half of batter add melted chocolate and mix well. Spoon 2 batters into greased 9-by-13-inch baking pan in checker board fashion. Swirl slightly with spatula. Bake at 350° for 35 minutes. Cool. To prepare frosting: Melt together chocolate and margarine. Add milk and powdered sugar and beat well. Spread over brownies and sprinkle with nuts. Cut and serve.

Cocoa Brownies

3/4 cup cocoa

2 cups sugar

1 cup butter or margarine, melted

4 eggs

1 teaspoon vanilla

1 1/4 cups flour

1/4 teaspoon salt

1 cup chopped walnuts

Frosting

2 cups powdered sugar, sifted

1/4 cup cocoa

3 tablespoons butter or margarine, melted

1 teaspoon vanilla

2 tablespoons half and half

1/2 cup chopped walnuts

To prepare brownies, stir cocoa and sugar together. Add melted butter and mix well. Add eggs and vanilla and stir again. Add flour and salt and mix until smooth. Fold in walnuts. Scrape mixture into greased 8-inch square baking pan and spread into an even layer. Bake at 350° degrees for about 40 to 50 minutes. Cool frost and serve. To prepare frosting: Combine powdered sugar and cocoa. Add melted butter, vanilla and half and half and stir until smooth. Fold in walnuts and spread over brownies.

Deep Dish Brownies

3/4 cup butter, melted

1 1/2 cups sugar

1 1/2 teaspoons vanilla

3 eggs

1/2 cup flour

1/2 cup cocoa

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup peanut butter chips

Cream together butter, sugar and vanilla. Add eggs and mix well. Add all dry ingredients and beat thoroughly. Fold in peanut butter chips. Spoon into lightly greased 9-by-13-inch baking pan. Bake at 350° for 40 to 45 minutes until brownies begin to pull away from pan. Cool before cutting. Do not overbake!

Peppermint Brownies

2 squares unsweetened chocolate

1/2 cup margarine

2 eggs

1 cup sugar

1/2 cup chopped nuts

1/2 cup flour

1 teaspoon vanilla

Frosting

4 tablespoons soft margarine

2 cups powdered sugar

1/2 teaspoon milk

2 tablespoons sour cream

1/2 teaspoon peppermint, extract

Drop green food coloring

Glaze

2 squares unsweetened chocolate

2 tablespoons margarine

To prepare brownies: Melt chocolate and margarine together. Combine all other ingredients and add to chocolate mixture. Mix thoroughly. Pour into 8-inch square baking pan. Bake at 350° for 20 to 25 minutes. Cool. To prepare frosting: Combine all ingredients and mix well. Spread over cooled brownies and let stand until frosting sets. To prepare glaze: Melt chocolate and margarine together. Drizzle over frosting and tilt pan to spread thinly. Cut into bars and serve.

Saucepan Brownies

8 tablespoons margarine

2 squares unsweetened chocolate

1 cup sugar

1 cup broken pecans

1/2 cup flour

1 teaspoon baking powder

1 teaspoon vanilla

2 eggs

In a double boiler melt margarine and chocolate. Remove from heat. Add all ingredients, except eggs, and beat well. Add eggs and beat well. Pour into a greased 9-inch square baking pan. Bake at 350° for 30 minutes.

Oatmeal Brownies

1 1/4 cups boiling water

1 cup quick oats

8 tablespoons margarine

1 cup sugar

2 eggs

1 1/3 cups flour

1 teaspoon baking soda

1/2 teaspoon nutmeg

1 cup brown sugar

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup chopped nuts

Frosting

8 tablespoons margarine

1 cup brown sugar

Pinch of salt

4 tablespoons milk

2 1/2 cups powdered sugar, sifted

1/2 teaspoon vanilla

1 cup coconut

To prepare brownies: Pour boiling water over oats and margarine in a large bowl. Cover and let stand for 20 minutes. Add all remaining ingredients and beat until smooth. Pour batter into greased jelly roll pan. Bake at 350° for 30 to 35 minutes. To prepare frosting: Melt margarine in a saucepan. Stir in brown sugar and salt. Cook 2 minutes over low heat, stirring constantly. Add milk, stirring until mixture comes to a boil. Remove from heat and gradually stir in powdered sugar and vanilla and mix well. (If mixture seems too thick, thin with milk.) Fold in coconut. Spread frosting over hot brownies and serve.

Brownies

1/2 cup margarine

1 cup sugar

4 eggs

1 16-ounce can chocolate syrup

1 cup plus 1 heaping tablespoon flour

Frosting

1 1/2 cups powdered sugar

6 tablespoons milk

6 tablespoons margarine

1/2 cup chocolate chips

To prepare brownies: Cream together margarine, sugar and eggs. Add chocolate syrup and flour and mix well. Spread into a greased 9-by-13-inch baking pan. Bake at 350° for 25 minutes. To prepare frosting: Combine powdered sugar, milk and margarine in a saucepan and bring to a boil. Remove from heat, add chocolate chips and beat thoroughly. Spread over brownies.

Chewy Brownies

1 small package chocolate pudding mix

1/2 cup flour

1/4 teaspoon baking powder

1/3 cup shortening, melted

2/3 cup sugar

2 eggs

1 teaspoon vanilla

1/2 cup chopped walnuts

Mix dry pudding with flour and baking powder. Blend together melted shortening and sugar and mix well. Beat in eggs, one at a time. Blend in vanilla and pudding mixture. Fold in nuts. Spoon into 8-inch square greased baking pan. Bake at 350° for 35 minutes. Cool and cut into bars.
